4 cups of cubed watermelon, pips removed
25 ml castor sugar or honey (or more to taste)
50 to 100 ml gin
fresh mint leaves
- Combine all the ingredients in a food processor and blend until you have a smooth puree.
- Pour the watermelon puree into popsicle molds and freeze until solid.
- Unmould and serve on a bed of ice.
