August/September 2015 Foodie News

This theme of this newsletter is beans … from the humble white bean to the most expensive bean of all, the coffee bean.  Even though the latter is not actually a bean but a seed, they are referred to as ‘beans’ because of their resemblance to true beans.  Legumes appear in just about every cuisine in the world, from re-fried beans in Mexican cuisine, to a French Cassoulet (a stew consisting mainly of meat and white beans).  Legumes come in a variety of shapes, sizes and colours and can be consumed in many forms including whole, split, or ground into flour or paste.  Legumes are versatile and inexpensive and easily be incorporated into your lifestyle.

Seeing that we are nearing the end of Winter and Spring is only a few weeks away, I decided to include a combination of quick and easy one-pot dishes, such as soups and stews that has some form of legumes in it, as well as interesting salads and desserts that can be served when entertaining.  I’ve included a few classic recipes, like the coffee-based Tiramisu as well as some modernised variations of old classics, such as the Irish Coffee Dessert. The recipes I have included in this newsletter are: Cherry Tomato & Green Bean Salad With Lemon, Sweet Potato & Lentil Soup, Falafel (Chickpea Fritters), Hummus (Chickpea Paté), Affogato (Coffee Dessert), and a recipe for Japanese Cotton Cheesecake that only has 3 ingredients!  As usual, Carolié de Koster also contributed a variety of mouth-watering recipes:   Green Lentil & Vegetable Soup, Spicy Bean Stew/Salad, Home-made Baked Beans, Muskadel-Espresso Chicken Breasts with Prunes, Turmeric Chicken With Buttered Couscous, Coffee-infused Moroccan Lamb With Figs, Apricots & Cashews, Chilli Beef Sauce With Chickpeas & Beans, Aromatic Middle-Eastern Lamb With Chickpeas & Polenta, Zucchini Cake, Chia Coconut Ice-cream, Irish Coffee Dessert and Tiramisu.  Read more further down.

Carolié’s popular Art of Cooking Recipe Book is available exclusively from Cooking Up A Storm.  Read more further down.

Legumes are among the best plant-based sources of dietary protein.  Not only are legumes highly nutritious, they are also very cheap, which makes them an important food staple in many developing countries.

Dry Beans

Bean There, Done That
Dry beans are part of the legume family and are categorised under pulses together with dried peas, lentils and chickpeas, also known as pulse crops.
