These bundles will make a great side dish for any meal – formal or informal. It can even be served as a starter with a dip of your choice. The best part of this recipe is the simplicity of the ingredients and the method. It comes together very quickly which is great when you have a lot of other foods to prepare.

250 g streaky bacon
500 g orange sweet potato or butternut, cut into wedges
olive oil to drizzle
salt and freshly ground black pepper to taste

  1. Preheat oven to 180 ℃ and line a baking tray with a Wizbake baking sheet or grease with non-stick cooking spray.
  2. Work with one piece of bacon at a time and place it on the Wizbake sheet.
  3. Place 5 to 7 pieces of sweet potato that are more or less the same length on the one end of the bacon and roll it up tightly.
  4. Place it seam-side down on the sheet and do the same with the rest of the bacon and sweet potato.
  5. Drizzle a little olive oil over the bundles and bake for 15 minutes.
  6. Turn the bundles and bake for a further 15 minutes or until the sweet potato is tender and the bacon is crisp.

Note

Substitute the sweet potato or butternut wedges for pumpkin batons.  Just cut the batons into 10 cm pieces.  If the batons are frozen, steam them for a few minutes before making the bundles.
