An enchilada is a tortilla rolled around a filling and covered with a sauce. Enchiladas can be filled with a variety of ingredients, including meat, cheese, beans, potatoes,vegetables or combinations. Enchiladas may be filled and rolled in advance and reheated shortly before serving. To make enchilada’s, spread the tortillas with a little of the filling, e,g, Mexican-style Meat Sauce, roll up and place in a greased ovenproof dish that is large enough to take a few tortillas in a single layer. Spoon a little more filling over each tortilla and sprinkle with cheese. Bake at 180°C for about 15 minutes or until heated through and bubbly on top. Serve hot with the salad and sour cream.
