April 2013 Newsletter

With Easter Weekend and April fool’s day behind us, it feels as if everything is turning back to normal again.

In this month’s newsletter Cooking Up A Storm is moving from green to pink, with a brand new look.  I have also included a new “Recipes” page on my website.  My idea is to consolidate all the recipes on my website, whether it’s my own or Carolié de Koster’s, into one central place.  Rome wasn’t built in a day, so please bear with me while I am doing it.  Starting this month, I will be posting each new recipe as a separate post. Each recipe will be categorized and given tags, which will make finding a specific recipe on my website much easier.   You can have a sneak peak by clicking here – more to follow soon!  I will also be adding a lot more photo’s of recipes from Carolié recipe book, Art of Cooking.

This month’s recipes is a good mix of easy and not so easy, healthy and not so healthy recipes.  Carolié de Koster contributed the following recipes: Dukkah crusted fish portions, Baby marrow and ricotta cheese pie (Art Of Cooking), Seafood Paella (Art Of Cooking), Cloud Nine/Rolled Meringue Roulade (Art Of Cooking) and Mocha Ricotta cheesecake. Read more further down.

Seeing that National Spanish Paella Day was celebrated world-wide on 27 March and Carolié included paella in her selection of recipes, I decided to do a separate post on paella as well as a few of its key ingredients such as saffron and paprika. Read more further down.  In Carolié’s words: “Global cuisines continue to gain popularity beyond their countries of origin. By allowing it into your kitchen you can keep your cooking relevant to the increasing diversity, experience the pleasure of world wide home cooking and discover new authentic flavour combinations! Art of Cooking is a treasure chest of global cuisine recipes”.  See the Art Of Cooking Menu’s on my website for more information.

My “Ek het dit self gemaak/I made it myself!” holiday cooking class for kids took place on the 26th of March.  For those of you who couldn’t attend this class, be sure to book for my next holiday cooking class.  It will take place on Friday afternoon 26 April from 13:30.  (I am not available on the 27th anymore!)  Bookings will close on Monday 15 April.  Please see my website for more details. I believe when kids cook, they think to themselves: “I can do this!” which builds their self-esteem while they learn new cooking skills. If you would like to book an “Ek het dit self gemaak/I made it myself!” cooking party for your child’s next birthday party, secure the date with me as soon as possible to avoid disappointment. I specialize in tailor-made cooking lessons – whether for yourself or your domestic worker. This is what one of my clients had to say after I trained her domestic worker:  “Jeanri is extremely professional, comes fully prepared for every lesson and puts every effort into making sure that your domestic worker learns to cook. She even spent time with mine, teaching her maths so that she could halve recipes, double up on portions etc. Jeanri goes shopping on your behalf and makes sure that you have everything you need for a lesson, even down to the equipment needed in the kitchen so that there is no delay in lesson time. Everything she taught Fredah to cook has been delicious and we have used her recipes over and over. My domestic worker has gained a lot of confidence in the kitchen. Jeanri ensures that your domestic is able to write up a shopping list, keep to excellent hygiene standards in the kitchen, cook, bake, and tidy up properly afterwards. Definitely money well spent, I can only highly recommend her.” Kelly, Parkview. Read more further down.

Dukkah Crusted Salmon

April 2013 Recipes

With autumn in full swing, this month’s selection of recipes includes a fish dish, a savoury pie, paella, hot and cold desserts and home-made dukkah.  Be sure to have a look at the post on National Spanish Paella Day for more info about the origin of this popular one-pot dish.

Seafood Paella

National Spanish Paella Day

Paella, pronounced pi-AY-yuh, is a Spanish dish of saffron-flavored rice combined with a variety of meats and shellfish, i.e. chicken, pork, chorizo, rabbit, snails, prawns and mussels. Other ingredients are garlic, onions, sweet peppers, peas, artichoke hearts and tomatoes can also be added. It is named after the special wide, shallow, two-handled pan called a “paellera’ in which it is traditionally cooked over an open fire or gas burner.

Cooking Parties For Kids

When booking a cooking party for your child, you have the option to choose the language in which the party will be conducted, i.e. ”Ek het dit self gemaak!” or ”I made it myself!“. The parties can take place on-site, i.e. at your house or venue (like a club house or lapa) or at one of my venues.

Masterchef Cake

 Review:  Magnolia Bake & Cake

The first time I came across a cake by Magnolia Bake & Cake was when I did a Master Chef-themed Birthday party for siblings Giselle (9) and Julian (6) at the beginning of March this year. The cake looked like a creation straight out of Food Network Challenge! (see photo below).  How cute are the miniature kitchen utensils and food!
