Butter Biscuits

This recipe for butter biscuits is quick and easy to make.  They can be served plain or decorated with royal icing.

125 g butter, room temperature
125 ml castor sugar
1 large egg, lightly beaten
5 ml vanilla essence
500 ml cake flour
60 ml corn flour (Maizena)
5 ml baking powder
1 ml salt

  1. Pre-heat the oven to 180 ºC  and line a baking tray with a Wizbake sheet.
  2. Cream the butter and castor sugar in a food processor until light and fluffy.
  3. Add the egg and vanilla essence and pulse for a few seconds.
  4. Add the rest of the ingredients and process until it comes together in a ball.
  5. Remove the dough from the processor and knead it by hand on the Wizbake sheet.
  6. Place a 2nd Wizbake sheet on top of the dough and roll the dough to a thickness of about 5 mm with  rolling pin.
  7. Remove the top Wizbake sheet and cut shapes out of the dough with cookie cutters of your choice.
  8. Remove the excess dough and bake the biscuits for about 10 minutes or until golden brown.
  9. Continue re-roll the leftover dough in the same manner until all the dough has been used up.
  10. Serve as is or decorate the biscuits with royal icing.
