A classic G&T is just the thing to help you cool off on a hot summer’s day. It tastes even better in ice lolly form!
50 g castor sugar
50 ml water
100 ml gin
100 ml lime juice (about 2 limes)
600 ml tonic water
ice-cream sticks
10 lime slices (optional)
- Combine the sugar and water in a pan and heat gently until the sugar has dissolved. Set aside to cool.
- Combine the gin, lime juice, tonic water and cooled simple syrup in a bowl.
- Divide the mixture between ice lolly moulds, leaving a little space at the top to allow it to expand during freezing.
- Freeze for 1 to 2 hours until semi-frozen and insert the ice-cream sticks into place.
- Also add lime slices at this point if you want, pushing them to about halfway down.
- Return to freezer for a further 3 hours, or overnight.
- To remove ice lollies from the mould, dip the moulds in lukewarm water to loosen before removing.
8 to 10 ice lollies (depends on the size of your mould).
