With the sunny weather we experienced in JHB last weekend, I thought winter was nearing its end, but with the cold weather this past week I am wondering if we might not get snow in JHB like last year about this time!
I recently had a request from one of my clients to teach her to make veal schnitzel. She recommended that I buy the veal from her local butcher, Oaklands Butchery. I was pleasantly surprised by the variety of meat products, such as veal and wagyu beef, they stock. I subsequently decided to include a few of my favourite veal recipes this month. As per usual, I included a few recipes from Carolié’s popular Art Of Cooking Recipe Book. This month’s recipes are: Veal & Vegetable Deluxe, Crumbed Ham & Cheese Rolls With Creamed Cucumber Sauce, Veal or Chicken Schnitzel, Braised Veal Shanks (Ossobucco) With Gremolata & Creamy Polenta, Baked Butternut With Honey & Nuts and Frozen Mocha Cheesecake (I just had to include a special chocolaty dessert for the women!). Much like spring lamb, veal is extremely light in texture and very tender, and has a lovely flavour. The good news is that you don’t have to be an expert chef to create a delicious meal using veal. It can be sautéed, stir-fried, braised, stewed, grilled or broiled. In my post on veal, I am giving you tips and hints on which techniques to use to flavour veal, which cooking methods to use as well as which ingredients will compliment veal. Wagyu beef, also called the caviar of beef is regarded as the world’s most tender, flavorsome and succulent beef. It is regarded as a healthier option because it contains a much higher proportion of the desirable mono-unsaturated fats than other beef. Whether healthier or not, the price per kg might give you a heart attack! If you haven’t tried it, make a plan to do so soon! Due to the popularity of my Cupcake Couture Class (making a pair of high heel shoes out of cupcakes, buttercream icing and sweets) and its “girly” theme, I have decided to schedule a few Cupcake Couture classes in August to celebrate Women’s Day 2013. Is your child possibly the next Junior Masterchef? Make his/her next birthday party extra special with a “I made it myself!/Ek het dit self gemaak!” cooking party. The format is similar to the popular “I Can Cook” series on DSTV’s CBeebies. Each recipe is demonstrated to the children step-by-step and each child makes his/her own recipe from start to finish. Kids get to take the fruit of their labour home and tell Mom and Dad: I made it myself! Most of them eat it right away though!” Read more further down.

This months selection of recipes the focus in on veal (calf meat). As usual, I’ve included a few recipes from Carolié’s popular Art Of Cooking Recipe Book.

During the July 2013 school holiday’s twenty Mom’s and daughters spent quality time together while each designing their own pair of high heel cupcake shoes at my Cupcake Couture Class.
